Other than the white deer texture modders resource I can't find anything else for them, which sucks because I would love to add Moose and Elk to the game. I would like some fur textures, similar to how the sheep have extra fleece that can be added. This fur would come in handy for creating elk . Or perhaps some different antler types.

You or someone else would need to create new models for Moose or Elk. There are currently no existing models for those creatures for Oblivion. You can't legally import the Skyrim models, at least not for public use. And the standard Deer model is different enough from an Elk or Moose that you couldn't just upscale it and re-texture, nor would the existing antlers work in that fashion.

 

New skins for the existing deer however is relatively easy. It's a simple re-texture similar to any other re-texture you might perform. Changing color completely or adding spots is a simple task with Photoshop or Gimp. In this way you could easily create some more Deer variants for yourself.
