Combining meshes and textures

Hey, I'm new to Blender but have figured out how to open a mesh, edit it, and export it without problem.

What I'd like to do, however, is be able to combine a part of one mesh into another (lets say for example combine the top half of the light armor mesh onto the bottom half of the heavy armor mesh).

I know how to copy the boneweight over so the mesh works in game. My problem is that I haven't had much luck finding information on how to get the texture maps applied correctly. I know it probably has something to do with going into the UV/image editor menu to associate the textures correctly (so that it uses the light armor texture for that half and the heavy armor texture for that half, etc), but I haven't had much luck figuring out exactly how to do this. Also, I don't understand how to combine the images so that the two texture files become one.

If someone could point me to a tutorial or walkthrough of this, or explain it to me like I'm idiot :) how exactly the process works, it would be much appreciated, and praises would be sung to you and your children. There may even be a statue.
