There used to be a texture mod (telvanni reborn) for this, it was a really nice mod, but unfortunately that author deemed it necessary to remove hes pack from the internet.

Telvanni could really use some loving at this point, so if someone could make a new texture pack for those mushroom buildings that would be sweet.

 

("Skyrim Realistic Texture Overhaul Dragonborn" has textures for those buildings as well, but imo they are not that great.)
