Well, I can't say I've had such luck as some of these tales being told, all very interesting,
and I am reminded of an assassination mission that had me rather confused for a bit.

I was assigned to kill a certain woman, and arriving at the small farmhouse where she lived
I am thinking this will be the easiest job ever, as the woman is of advanced age and
obviously isn't going to offer any difficulty. ...

Not surprised. I had one assassin attempt to take her out by leading a bandit over to the place and have the ruffian attack my victim instead. One must pause and wonder when you witness an elderly old woman successfully kill an armored, axe-wielding bandit.

... was in Leyawin, going for Adamus Philida *wink*
I was behind the rock, and fired my arrow, just as he got out of the water, the guard looked at him, then at me, and the arrow struck Adamus in the neck, he died...

Someone in this forum mentioned killing Phillida by sending the Rose of Sithis straight through the man's heart— sweet shot. My own kill with the Rose wasn't as glamorous— I sniped the guy from atop a roof. If you imagine it, that results in the shot angling down into the target.

When my assassin loosed the shot, Phillida was in the water with his back turned to the killer. The arrow penetrated the small of his back— the arrow, of course, was canted down and exited clean through his crotch. o_O

What do you get when you take an Adoring Fan out to Dive Rock with a Staff of Telekinesis and an Oblvion Gate's Sigil Stone in your pocket? No bounty. No witnesses.

I killed a beggar in town with telekinesis and a sigil stone. I was bowling with the sigil stone actually, but when it felt down from the balcony at the player house in Skingrad. I cast a telekinesis spell on it, and started playing with it. When I pushed the stone against a beggar, I saw I was able to lift him up. After lifting him up pretty high a few times, he died. ;)

Where else did you think I got the idea for the telekinetic shot-put I used on Fanboy?

Recently with my sniper-archer Kajiit K'shirra, I've been able to make some pretty nasty kills, especially neck and headshots on Necromancers. I should have loaded Fraps to show some of them.

She is pretty much one shot, one kill on most enemy NPCs (I am using triple damage arrows + 50% extra speed on arrows), which increases the lethality of what it should have been.

I also took out the yellow team pitdog in the advancement match with 2 arrows! Elven arrows were doing 30 damage (plus 4x sneak = 120 damage, agility was in the 90s) plus the 12 damage or so my glass bow was doing (by luck, I found it in one of those slimey green sacs you find in Oblivion).

My first kill with my Dark Brotherhood character (to get in, not the quest) was weird. I was really rushing entry, so as soon as I exited the sewers I teleported to Chorrol stables and saw a guy working in a field, just raking at some grass and whistling.
Snuck up behind him, notched an arrow and sent it flying into him. He did some sort of weird twitch and I assumed he was going to fall, turned away and sprinted off down the road. Next thing I hear is "Help! Help!" and turn round to see the same guy charging at me, warhammer in full swing.
One bash, I'm knocked down, another bash and a shot from someone (not sure who shot that arrow) and I'm down and out.
Not exactly the best start to an assassination career ;D
Ended up killing some beggar then running out of town.

I remember him, I saved as I entered the town and decided to go look for him first, then figure out the best vantage point.
Found him swimming, entire place was covered in thick fog, guard staring at a tree.
"Nah" I thought, "Can't get him from here, surely..."
Walk to the edge, about 15 feet away from him and 25 feet from the guard (still highly interested in the tree). He looks up just as I let it loose into his neck.
Guard rus into the water, abandoning his beloved tree, only to shout "Are you alright?" Then swim back to do the bend down animation. By that time I was at the exit.
Not the most glamourous way to shoot him, point blank looking right at him swimming there in his little lake...

The stable outside of Chorrol's south gate, or the stable at Weynon Priory? I suspect you were dealing with the Weynon Priory fellow, who just happens to be quest-essential (I think) and hence unkillable. Never bothered with trying to kill him.

I was in some catacombs when I saw a monk sleeping, I shot and arrow near him so he would wake up, he woke up stood on his bed, then I slashed him with my sword, he flew behind his bed, he fell down behind the head-board, his legs went over his head and basically folded up.

No, definitely not an essential character, he was one of the workers at the Stables outside Chorrol, I never went near Weynon with that character, didn't want to have a quest window pop-up while I was fleeing.

Slight problem with that. The stable hand working at the Chorrol stables is a female Dark Elf. The one at Weynon is a male one.
