For some reason, when I bring up a window that displays the stats and such for an item, the window is so long that there is no way for me to click OK so that I can save any changed I had made. I remember fixing this problem, some how, in the Fallout 3 G.E.C.K., but I cannot remember how for the life of me.

If anyone has has any similar troubles and fixed it, I'd really appreciate the info.

Try to maximize the window and change your monitor resolution, then move the stats window up and try to resize it.

Fixed it... sort of. I had to set my screen resolution to its highest, and then move the task bar to the side of the screen before I can see the button. LOL.
