You could try searching for Slinks S3 Ravage in Nexus. It randomly spawns enemies making most fights longer. It doesn't respawn but all in all you'll be fighting more enemies and getting more experience.

There is another mod that makes Human Noble Origin Story harder. A mod where you have to fight four lieutenant ranked Howe Knight all wearing massive armors. But I don't remember its name.

And I saved the best for the last. There is Quests and Legends mod. It vastly expands the OC. More fighting is assured.

I recommend you download Awakening in the OC mod. It will allow you to obtain new spells, talents, skills, specializations that were included in Awakening. You have to pass level 20 to unlock them however.
