Well so far so good, ran around outside of Whiterun after I did the wait thing. And no crashes. I'll test more later and test mods too.

Thats great to hear, thus far.

@MAdWizard - thank you for clarifying the cell reset per guide. I knew breezehome was off limits, but specify further.

Added a food mod, went down the path to Graymoor fort or whatever it is and crashed. Took it off and went the same way, no crash. Put the same mod on again and did that, no crash and even went around battling some wolves and such, still nothing. So I don't understand if my game is stable or not?

@this point, if you're not crashing, maybe hold off on adding any mods for a bit. Keep playing, let some ingame time pass to determine if you've achieved some stability.
As madwizard suggested, that guide does give you concise instruction for waiting days to reset cells. If you're adding mods in your continued attempts to isolate a cause or problematic mod, use the wait31days b4 and after each mod added avoiding the non reset locations ( http://www.uesp.net/...rim-Places-Safe)

Uninstalled every single mod except the wait menu one, followed that guide for a clean save, reinstalled the mods i had on that were working somewhat, fast traveled inside of Whiterun and crashed.

I even followed the guide! Step by step!!

How would that make any difference. I crashed before then too...reseting the cells actually seemed to help for a little bit. So going back before then when the crashes were worse makes no sense at all.

I finally got sick of this all and uninstalled Skyrim. I'm reinstalling it as I speak. Maybe now it will damn well work.

Well at least now your progress should more forward. It certainly sucks having to do it, but your starting from scratch and you can diligently approach it so every step is backed up and/or noted.
Don't forget to make a backup of your vanilla data directory. You'll have it as a basis of comparison, and easier corrections. The backups you keel along the way, the easier it'll be if anything breaks. Typically quick fixes. Sorry we couldn't correct the issue.

So reinstalling the game isnt what I thought it would be. As in it deletes all my mods and save files. Again I listened to my bf, because he said that maybe it's the whole game fing me up. So it's not.

I don't know what to do...should I dump my save files and mods now?

at this point after all the troubleshooting you've done with inconsistent results, I'd favor dumping saves . Slowly add the mod you want add, thoroughly testing as you add them. Keep a tidy load order with BOSS. Keep organized backups. Remember launching through steam launcher resets ini files to default. (Which you can set default ini in directory if you choose).
Make clean saves as you add your mods, heed the guide recommendations for this process.

Figure if you add up all the time spent trying to fix, you'd probably be close to where your at now already.
At this process lead to discovering your overheating hardware before it was too late.

Again, I emphasize (lol) backups! :D
its possible this may have been fixed sooner had there previous files for comparisons to eliminate possible causes.

Actually, and i should have claified this, you should wait in places such as breezhome or the testing hall. Basically you should wait in any cell flagged never resets, and is totally disconnected from the worldspace. Breezehome is such a place. It wont cause any major problems if you dont wait in these places, but the cleaning will not be as complete, as the cell your waiting in will not be cleaned.

I feel your frustration. Had the same thing happen to me, uninstalled and then discovered that it had also wiped all my mods. At this point, i would recommend just dropping skyrim for a week, and then coming back to it again. Frustration doesnt help with this sort of crap happens, at least in my experience :pinch:
