If you want a challenge try the dwemer ruin of Irkngthand near Windhelm. I'm having a blast there right now.

Fort Dunstad.
Only one thing bothers me about the location is the lack of snow on placed buildings.
Just use the disable command to remove all the snow piles and rubble in the large destroyed tower.

I placed it next to whitrun next to the Bathing Beauties Suite that I have installed. I first tried to include the Suit into the perimeter but that worked to good
The village citizen where using the pools with pleasure
So I now placed it so the perimeter ends right at the suite which also let the perimeter go thru roads half around the spot.
The disadvantage is that there are no trees but I like it open

Secundas Kiss: flat area, mountain on the one side, cliffs on the other - just two ways to reach the settlement. Placed the houses on the rocks to hide them - or still used "disable"

Labyrinthian has some flat spots for buildings and pre-built stone shelters for smithing/alchemy/enchanting. Haven't tried to build it there myself yet though, but it looks promising =)

South of the vampire castle there is an elven fort. kill the elves (sorry) and it makes a great base as the preexisting structure means that the navmesh isn't a problem. probably the best location as far as pre-built forsts go. DLC required of course

After winning the battle of FD, the outpost is manned by Imperial soldiers... really makes you feel like the "commander" as you build it up and the soldiers are patrolling, talking to you. Then you can outfit your hired guards in Imperial Armors for extra effect.

Dayspring Canyon; the valley that leads to the Dawnguard castle.
DLC required, of course, but I've placed the well just inside the fenced area (post defence upgrade) and the area is excellent for fortification. I have all 4 output markers on the road leading in, which makes for very intense raids!

First of all, this is an awesome mod. I just found a few spot that you may like...
Robber's Gorge (Desfiladero de ladrones): Its on the south of morthal, just crossing the bridge. Nice wood fort, and plains at each side. Really nice.
Fort Sungard (Fuerte Sungard): On the west of Whiterun, near Rorikstead. Its the most- completly fort that I've ever seen. You've got a chapel, a meeting place, the barracks. Even got a hide exit (not a hidden entrance.. its like a hole in the ground of a tower, you can just fall there. Then, got to lockpick an iron door to escape in the mountains). For a stone fort, I really love it.
Knifepoint Mine (Mina de la punta del cuchillo, o algo así...): Its a really nice wooden fort. Well hidden, and a few "districts". Give it a try.
Lost Valley Redoubt (Reducto del valle perdido): Just at the back of the Bilegulch Mine, its this spot with a few levels and a HUGE area to build. For me, its to huge for me, you dont build a fort there, you build a city. If you wanna get a BIG outpost, go there.
Halted Stream Camp (Campamento del Arroyo Estancado): On the north of Whiterun, its a small fort in a plain near a lake. I dont like it so much because its owned by some mammuth hunters, and there's blood on the entrance xD But, the place its very build-friendly. This is not my favorite, but you may like it.

While I was doing the quest for Exoskeleton mod which requires one to enter Blackreach I couldn't wonder how that huge cave would be great place for an outpost. Would make interesting dragon raids atleast =D
