This is nothing but a simple desaturation. I'm pretty sure you could have done it as good as me..

Well yes, if one pays attention to doing it, it's actually pretty easy. Especially since the texture files can easily be opened with Paint.net, something that I consider more user-friendly than Photoshop. (I know how to use both and I still prefer Paint.net)
It just kinda comes down to whether you can be bothered with it. Granted, there's a whole middle process of tagging something on in the .ini, running the game, then figuring out where the right texture is. Hell, I'm afraid to try just because I don't know what it'll do to my current replacers.
I think that's what's holding a few other capable people back...not to say a whole lot though, I suppose. Still, good job regardless. We shouldn't be afraid to encourage the people who are less lazy than us!

Believe it or not, I haven't tried Paint.net yet. GIMP is my weapon of choice, because it's the one I'm used to. It's not more user friendly than Photoshop, but hey, it's for free

Actually, there are a few tricks to make this process much less annoying, and safe. Feel free to ask if you decide to make your own retex.

Paint.net is free too, but you don't have to change if you're already comfortable with something else.
And no thanks, I'm good. I don't have the skill to make any reskins other than turning grayscale and tweaking the saturation.
