thx a million for the link Ladez but I'm afraid I've already spent several hours staring at that video, absorbing every detail. While I have been able to texture my models to one solid textrue in game, there are two problems I'm still having. 1: when I'm making a .dds in gimp, nifskope decides to be a b&@*$ and never accepts it (it doesn't show up on model) and 2: the video shows applying one solid texture to the model (wood). Already, every one of the models in my picture has more than one texture on it. Would the steps be different with multiple textures or are they the same?....I got alot of work & learning to go haha.

Thanks. Tbh, I doubt I'll ever give up on this project. Las Vegas' signs are just too colorful and creative to forget. One day I'll manage to texture all these models correctly and hopefully release them as a resource pack or something. Alot of signs to make still and a lot of work to be done so theres no end in the near future for me :).

I don't know if these will help you at all, but here are some TES tutorials that were recommended to me when I started my mod:

This one in particular might be useful:
