In my opinion ("only" modding for the last 3 years) Mod Organizer is completely stable for normal Skyrim (in over two years not a single error, bug or anything) and even the 2.0 beta for games like Fallout 4 worked fine for me. I would even go so far as to say it's more stable and generally better then nmm ;-) . For the "old" Skyrim there will never be something else for me and I'm still using it.
