Has anyone made a mod like the one you asked for? - If not, then here's another idea: Instead of changing Vaas's [North] Island to have the more dense jungle you see in the demos, how about just leave that island as it is, and have Hoyt's [south] Island be the one with the denser jungles all over, which would illustrate Hoyt's island as being more challenging and more dangerous than Vaas's.
