Some advice with editing NPC dialogue

Hello all, I have modded casually before, but never edited dialogue. I downloaded the Ghoulified mod, and loved it. I realized it was just for Fallout New Vegas, so while it works with TTW, Fallout 3 was unchanged by the mod. I wanted to give a shot at updating the Capital Wasteland Content to be more immersive for use with Ghoulified. Updating factions to influence hostility wasn't hard, but I am stuck with dialogue. Any advice on editing existing NPC dialogue?

To be specific, at the moment I would like to edit Gob's dialogue. I was planning to remove his dialogue relating to smooth skins. In fact, I've edited some other NPCs in Megaton to make them ghouls (with the time shift between games, and their proximity to a bomb, it makes sense some might have turned into ghouls), so I'd like if Gob just treated me like any other person. Any advice with this would be wonderful. Thanks.

I plan to edit other NPCs, but I imagine if I can understand how to edit one, others will be easier.

Also, if anyone has any advice on changes to make to Fo3 to make it immersive with Ghoulified, that'd be lovely :D

The FNV version of the GECK was just an incremental improvement upon the FO3 version. No idea if there were any significant changes between versions for dialogue, but a good starting point would be the 'Dialogue and Lipsynch' section of the wiki "Getting started creating mods using GECK" article which has links to tutorials and "tips" from experienced mod authors.

Dialogue can get convoluted, with conditional variables set by quests and "Result Scripts"; and "Dialogue Packages" triggered by Activators. It takes patience to work through.
