Help Modifying an Existing Mod

Hey all! I'm new to modding and I have an issue I need help with.

I made a tweak to the Creation Club's Survival mod (which is a "Master" file), saved my changes as a new .esp, loaded my game and my changes had been applied to my game. Great so far.

Now I wanted to try that with some mods I downloaded from Nexus. I have two mods that I wanted to tweak (both "Plugin" files), so I loaded both in the CK and made my changes. I didn't want to overwrite the original mods so I saved my changes as a new .esp. Enabled it, made sure it was below the original mods in the load order, but my changes will not apply to my game.

Am I correct in assuming that you cant overwrite a plugin with another plugin? Do I somehow need to make the CK see them as "masters" to my plugin? I'm not exactly sure how it works. Can anyone tell me how I can apply my changes to these plugins without actually saving over the original files?
