It would be super cool to replace all the current generic orgs (Vandals, Dragons, etc...) with real orgs (Liquid, Cloud9, Faze, NiP, etc...). But I have no idea how to even start doing this and theres no info on how to make mods for this game.

Bro , I'm not a professional in this business, but I think you're going to have some copyright issues.
The fact is that behind each such team is the management, and it has clearly registered the logo , company, name, and so on , and all this has copyrights that will not allow you to do anything with it for your own purposes, only if you do not agree (and you are unlikely to agree)
I love to bet on esports events, and once upon a time on https://tips.gg/ during the next bet, I met a guy who was engaged in the promotion of esports teams. He told me that once a team sued a friend for allegedly repeating the logo of the first team
And of course they were slightly similar, but I don't think they just copied it, but the court found them guilty and they paid for the damage
