The current version of the game doesn't allow you to untrack jobs. This is particularly annoying post game, as it defaults to "meet Hanako at Embers" any time you complete a side job. I know you can disable to UI for the job tracker on the HUD, but this doesn't remove the waypoint on the mini map, and I'd like to be able to track side jobs as I go, without it defaulting to the permanent final mission.
