I know this thread is long dead, but on the offchance that somebody else stumbles on this with a similar issue, there is the mod called Pronouns here https://www.nexusmods.com/skyrimspecialedition/mods/43816 that changes how you are addressed. I don't know if it changes how the game treats your sex though...
