Bear with my noobiness for this post :P I updated (I think, don't really know how to check) to 12.6 AMD driver and this didn't fix the issue. I'll mention that I'm running SkyUI mod and SKSE although it seems that mods aren't (for once) the culprit here. Also, how do you change your shadow resolution? I didnt see an option for that in the graphics settings (just low medium high and (maybe) ultra) Thanks!
