I really, really want this too. I loved hardcore mode in Fallout, something like that in Skyrim would make the game so much more for me. I want to need to gather and cook food or go hungry (maybe your health wouldn't regenerate, and if you were starving, it would go down), and sleep occasionally or your fatigue will be affected. Unsure about the drinking though, because most liquids in Skyrim are alcohols, and I don't want my character to be an alcoholic :)
