Fallout 1&2 both have desert eagles in them. But 3&NV seem to avoid using any real world names for guns. The Classic Fallout Weapons mod puts them back in.

Looking at the steam store site of FA:NV it says "Low Violence: German low violence version only available with German language". So i am guessing setting the language to english will activate the full gore. it works this way with Killing floor, but i did not buy FA:NV yet. Setting the language of the steam client to english may also have an effect (the subtitles of the Left4Dead games are actually affected by this). Be warned that steam is going to download all the voice audio files when you change the language.
