I have also been having this issue since yesterday. I have no idea what mods are causing this but I think it's one of the override mods such as Improved UI. I went onto an older save that was a clean run with no mods and disabled all my current mods. The only thing I had on were the overrides and the error persisted there as well.

I'm having an issue where nothing in my bags is showing up. Items in my actual inventory are ok but items in backpacks, pouches, and the alchemy pouch within my inventory all have invisible items. When I'm trading with merchants, that whole window is invisible. Anything in boxes and crates are invisible as well.
