You can download the old version depot and then just dont update to keep playing.
To start getting the files ready. Change the name of the elden ring folder to elden ring 2. After that create a new folder named ELDEN RING in the folder where all the steam games are.
Type this in your browser "steam://nav/console" then open with steam when prompted,
Then copy paste:

Goto the steamapps and look in the content folder. Copy what is in those folders and merge them together in one game folder and then move the game folder to the elden ring folder. Put the seamless coop mod files in that folder.
Once a seemless update does come out, just run the steam update as normal to update elden ring and then manually update seemeless coop.
