Tried both of these "Dodge" styles and the only thing you don't do is dodge, when you dodge, you should instantly sidestepping or backstepping, you also need to go some distance you could take ques from Dying Light evasion system or Dissidia, even Ninja Gaiden Dodging style would suffice.

I absolutely agree a mod that limits the magicka of the enemies is a must because as it stands it renders bolt spells useless.
