You can skip any cutscene in the game, just click the left mouse button and then the right mouse button (you will be prompted to skip the scene). But the scene will start before you can do that. However, there is only one "forced" sex scene in the game at the very beginning. All the others are optional.

I've combined the mods you're talking about into a new one: http://www.nexusmods.com/witcher2/mods/689/? There is also a version with extra talents and one that keeps Dark Mode visual effects. I haven't tried Rise of the Sword myself so I don't know how difficult it would be to merge them together. I'm not a fan of FCR/FCR2 so I haven't tried to make it compatible with it either.

The only mods that will show up in the Launcher's "Mods" section have to be in your Documents/Witcher2/UserContent directory and are usually RedKit mods. Anything that would go into your CookedPC directory are going to bypass that entirely. You'll have to actually check in the game itself to see if they're working.
