Your friend is wrong. Focus on STR or DEX, the former grants more damage, the latter, better defense. WIS shouldn't be a dump stat for a monk, but not the primary one either. Start with around 14 and leave it there.

Enjoyable Builds?

Well, there's no objective answer to that question, what's enjoyable depends on the person. Some people like fireballing around, others like stealthy characters, others, just hacking stuff with a big sword... any preference?
I haven't played NWN1 much lately so my building skills may be a bit rusty, though, and I haven't played the OC in ages, so I don't remember if there's any druid-specific quest or whatever.
Also, if you really like the OC, go ahead, but what I'd suggest, if you haven't done so already, is to try some community-made module. Many of those are way better than the official campaigns. Most can be found on the Vault.
