The events of Morrowind happen in 3E427 and the Red Mountain explodes in 4E5. End of the third era (ie, Oblivion) is 3E433, so there's 11 years between Morrowind and the Red Mountain exploding. Plenty of time to go to prison and become Saint Jiub. Although arguably a little pointless given the explosion probably would have done the same thing.
