There are some posts on the Resident Evil Modding Forum and some people aready did Model Swap and Texture Swap on the one-shot demo, it is hard because you don't know for sure what files represent what ingame and from what I saw moding the final game is different from the demo, modding scene on this game is pretty raw yet so just give the modders some time to develop the tools needed to mod the game. If you have the Original Soundtrack pack/Deluxe Edition you can go to the audio settings on the main menu and swap it so every time you enter the game and hit a button the narrator will say "Resident Evil 2" like it was on the 1998 original one. 90% of the game will sound like the original one too, just some new features/parts of the game that have new music/sounds.
