Getting the same error, there was an update today that did some asset updates so thats probably whats breaking modded games. Someone on valheim forums was saying a reinstall to unmodded vanilla was working fine for them (supposedly an issue with BepInEx) so that could be an option if you want to move your save over. Other than that we might just have to wait till the mods/mod loaders get updated which could be a few days or more.
