Everything is currupting mid game.

So this is a first for me and I've tried mostly everything I can think of that might fix it. From re-installing mods, Re-installing skyrim, Running Script lag tests, Making a whole new save and much more. However when playing skyrim after about 10-20 mins everything will just stop worked. NPCs will no longer talk to me and AI seems completely bugged out. If I open up the Load save Menu it will say that all saves are corrupted. However I am still able to make a new save perfectly fine. Nothing exactly breaks though as just closing the game and relaunching it fix's everything and I can keep playing from where I just saved.
