TRKn
There is already a mod here on the Nexus that grants a vendor inventory of items that are either unimplemented in the game but accessible through game files or mutually exclusive items: Act 1 Zhentarim Hideout vendor sells inaccessible gear. Ring of Evasion and more https://www.nexusmods.com/baldursgate3/mods/3500 And there are mods that add the ability to get certain items that require a specific plot decision, like the Bhaalist Armor or Potent Robe. However, currently within the game there are a large number of items that can only be obtained one time, or obtained through some quest that is permanently missable or gated past some event / timeframe. For example, the Ring of Protection that is received from Mol for stealing the Druids' Idol of Silvanus. This quest is not offered if you deal with the grove situation before ever talking to Mol for the first time, thus making this item just permanently unobtainable. There are a large number of other items that are similarly from a unique source or else very easy to miss since the vendors are either permanently killable during story events or could even die before becoming available as a vendor/having the item in their sellable inventory, like the Cloak of Protection (https://bg3.wiki/wiki/Cloak_of_Protection) from the Quartermaster in Last Light or the Evasive Shoes (https://bg3.wiki/wiki/Evasive_Shoes) from Mattis in Last Light or the Gloves of the Automaton (https://bg3.wiki/wiki/Gloves_of_the_Automaton) from Barcus in Last Light. If you don't save the tieflings in Act 1, or kill Isobel before buying these items, or experience the bug where you can't tell Barcus to go to your camp in the Grymforge, or any other easily achievable scenario that prevents these vendors from being able to sell these items, then you just can never obtain these items in your current game. Please add these items to some vendor(s)' inventories in Act 3 to make them obtainable if you missed them because of story events or give you multiples of them if you wish. I would suggest Danthelon or the Dragonborn lady in the blacksmith's since they are accessible early without having to trigger too much story events.
