Copying backed up version of data folder for skyrim

Ok skyrim updated somehow even tho I have it set not to in steam, I intially updated the mods that needed it for skse but when I went to run it crashed at character creation.  This leaves me a few options to disable all plugins and add a few at a time till I work out what cause it but I have 300 plus mods and  had a nicley working set of patches so don't really want to do this. 

I have a complete copy of the whole skyrim folder in another drive but if I copy that and overwrite the new one vortex says save as and delete or relink.  The relink will use the new versions of the mods on the staging folder putting me back to where I was

Is there a way I can copy the old data folder and get vortex to use it as the current state?
