Mod that removes scorpions from Assassins creed origins

the game is assassins creed origins and the only dlc that has this is The Curse Of The Pharaohs DLC
Some of us have a fear of insects and this DLC has huge scorpions that are a very common enemey type, would it be possible to make a mod that replacex the texture with something else like a horse? or a cow? something that is already in the game files?
 
 
the scorpions are HUGE and its the only reason i never 100% this game and i want to do it but with how creepy the scorpions are its really stopping me from doing it
