Fish disappear and you can't do anything; the game won't load anything at all—not even your inventory—until it crashes. It's a very grim bug if you wait until the crash: no sound, no vegetation, and screams (you have no idea why). Wow... I've never experienced this on PC, only on my Switch (yes, I bought Subnautica on every imaginable platform just to see the difference...).
