Benefit / Risk of levelling skills past 100?

I'm using the Oblivion skill uncapper, and a number of my skills are now past 100. I've read through articles explaining which skills technically benefit from being elevated past 100 and which don't, but I still have some questions.

1) Can having a skill over 100 cause game-breaking issues? Specifically I'm thinking about Sneak - ever since I levelled it past 100, I've witnessed occasionally erratic behaviour from enemies while I'm in sneak. They'll "jitter" about, turning around like 14 times per second, or sometimes they'll run away from me (after my opening attack), as though their pathfinding can't figure out where I am. Often coming out of a sneak position will rectify this.

2) Is there a limit to the benefits of skills over 100? Specifically, I'm considering making a custom enchanted ring that would fortify Alchemy to 300+ , so I could make some worthwhile poisons for use on high difficulty levels. Even with the uncapper in place, is there eventually a point where it won't make any more difference? And if there isn't, is there a risk of crashing the game by introducing massive numbers like this?

I have not seen anything break on Elys Uncapper which extend some skill and attrivute formulas to 200. You already got enhance effect from athletics and acrobatics (but without the UOPthe acrobatic bonus was insignificant) No change to alchemy, armors, sneak, security, block, or armorer. Weapon and hand to hand damage goes up, Magika costs go down, way down as you approach 200 skill.

i have tested this matter in my game many times.. although i haven't yet crashed or had any problems.

just becarefull about athletics skill and speed attribute if they be too high, it makes walking annoying as hell

also acrobatics, some times if you jump really high your game freezes
