Nuska managed to sculpt the head meshes in a way that each race has its own ethnic features. The Imperial headhuman that is shared by the human races even adapts to the default facegen sliders in a way that each of them is unique and you would believe they do not share the same head mesh! The most different are the Mer ones. My favourite is the Altmer one. They look so royal, proud and majestatic. And Bosmer look so gentle, crisp and clever. Dunmer are scary, the first time I applied the Aquamer textures to them I was shocked and frightened at the crossbreed between an Elf and a Carcharodon Carcharias that stared back to me. There's a pack of agemaps for OCO v1, Warpaint for OCO, that adds the Skyrim Warpaints to all the races. Its author stated he would do the same for v2, but is still MIA.
