I have a request:

Is it possible for someone to create a simple mod that increase the number of deers in oblivion?

I like hunting, using a bow.

Adrenaline Oblivion meets your criteria. However, it comes with the downside of also having increased monster and bandit spawns, so the game does get harder. But yes, this increases the amount of deer from one every now and then to several, as they usually run in packs now.
