Picking it up without reading it right away would be the next best thing I think. Cause it would prevent it from saying 'read' at the first page until the user actually intended to read it.

Completely agree. If that is what you want there's Sometimes Pick Up Books which gives you MCM options for either Always picking them up without reading, or doing so on a hotkey (default is set to left shift).

 

However, it blocks you from grabbing books if they would be stolen, and instead warns you and gives you an option to read it or cancel (if opened to be read you can steal it).

I haven't actually been paying attention, I'll have to find a book I haven't read yet and test that out. (or abuse my testificate some more...)

The whole point of Sometimes Pick Up Books is to avoid triggering the book read action. So if you use the modifier key (or just set the default to pick up instead of read) you won't open the book or accidentally mark it as read. I always play with the default action as take instead of read. The only times I read books are from my inventory or by holding shift to read special books (Black Books from Dragonborn, books owned by other people, etc.) directly from the game world.
