Tomlong54210
Do you mean a hand-to-hand-only fighter, a pure mage, a pacifist or what? Edit: By pacifist, I mean someone who has their companions do all of the dirty work, of course...

David Brasher
I like the pure mage build, although it is easier if you have a dagger or mage staff to use when you are backed into a corner and all out of magicka. I sort of like High Elf characters born under the sign of the Mage, but I will take absolutely any character, class, or birthsign and play as a mage or spellsword if I feel like it. Sometimes I play pacifists without any companions. I try to minimize bloodshed by running away and using illusion spells for evasion or to temporarily disable pursuers. I use a mace when the going gets tough, because the holy books forbid the shedding of blood. But a skillfully wielded blunt instrument can kill without shedding blood. (I am not sure the gods are pleased with how people use this loophole.)
yeldarb
Main Skills (1) Hand to Hand (2) Block (3) Alchemy (4) Alteration (5) Restoration (6) Acrobatics or Atheletics (7) Sneak,Illusion, or the skill you did not choose for (6). For Birthsign you are probably better off with Warrior, but Atronach is a second option because Fireballs will hit you when you get close to an opponent. For an unarmored combatant with hand to hand strength and speed are good choices for main attributes. I added quite a few magic skills because you will be unarmored, alteration has shield spells, alchemy offers restorative potions, and a blocking with your arms will hurt you so restoration is a useful skill. Acrobatics gives you more dodging options and atheletics allows you to close with opponents sooner. Illusion and sneak will allow you to get closer to an opponent without being seen. Tomlong54210
This mod might be a nice fit. I might try it out myself to make H-to-H more worth bothering about (and because Strategy Master's mods are awesome! ^____^) - http://www.tesnexus.com/downloads/file.php?id=18834
