Firstly, he needs to hide his one ghoul eye from Hide and others so that it is not revealed that he is a ghoul. Secondly, kaneki ken mask is very famous because when he needs to go out as a ghoul to feed on other humans or fight other ghouls, he cannot take the risk of CCG identifying his true identity in order to protect himself.
