Actually There is a gory junk steampunk rex mod already out there, its here on Nexus try searching "steampunk" or search rex and its something like steampunk rex.

I just thought of a quick(ish) way this could be made, ghoulification, take the texture/mesh of a ghoul and apply it to the canine model and re-color it a bit black and gorey and ta da undead dogs!
