If you want to change anything to anything else, you need to either create a new model for it or edit the existing one and for that GECK alone is not enough. Look around the nexus, you might find a replacement for what you are looking for. Though I can't give you much help on remodelling, I can help you on the retexturing part. In order to retexture a weapon: Get FOMM -> Tools -> BSA Unpacker -> Unpack "Fallout - Textures2.bsa" and put it somewhere.Browse to the extracted folder -> weapons -> find the weapon texture you are looking for.It's divided nicely into categories, you will be able to find it easily. There must be a couple of similar files; at least two, one named normally and one named with a _n at the end. Get GIMP (or Photoshop but I don't know whether it can open DDS) and get the DDS plugin for GIMP. Also get the Normalmap plugin for GIMP. Google for both. Open the regular DDS texture file in gimp and retexture it to your liking. Save it. Go to Filters -> Map -> Normalmap and press OK in the dialog. Overwrite the texture file with the _n at the end with this one. Copy both files to your Fallout New Vegas \ Data \ textures \ [Directory structure inside the BSA until the folder you found the texture] and put both files in. Done. Start the game.
