Type in the God Mode console command (just so you wont get killed by fishies) and start swimming in any direction on the ocean (press "Q" for auto moving). You'll go on forever. Now go get a burrito or two. Come back a few hours later and you should have a decently high athletics. Personally though, I made the mistake if making athletics my minor and acrobatics my major... oops. So I just trained about 60 points :) On a side note....
