Does anybody know the best way to kill chickens and cows that are growing into large numbers at some of my locations. I cannot kill them as there are too many witnesses. I have tried summoning beasts through the console but they kill the civilians also.

Option 1.

Create a mod that makes the chickens the public enemy for everyone. That way you would have almost no chickens at all.

 

Option 2.

Have you tried to stealthkill the cows and chickens?

And using Invisibility spells or potions prior and after the kill?

 

Option 3.

Use the console, mark a chicken and type "kill"

If you have a lot of chickens and cows I would suspect a mod that adds them as the vanilla game doesn't have very many. Typically those kind of mods have scripted options to set the numbers. If you skip the installation script it may default to the maximum value. Or it may be changeable through something Like MCM. Look in the mod author's documentation to see how to regulate the population.
