Contests would be awesome! I see a lot of them on art-related sites, but I've never been involved in a modding contest. That could be very interesting, if done well.

 

Also, in terms of spotlights I'd love to see something akin to Gopher's Skyrim Mod Sanctuary and Skylight videos, since he doesn't seem to be doing them anymore.
