Katy420
The easiest way would be to pick one to use as a base, and if you see a model you like in another mod rename the .dds and .nif (if there is one) of that model to work in the one you picked to use as a base. So, say you run SFO as a base. You try out a mod with a grass you like better/want to include. Find the file(s) of SFO you would like to replace by opening up its files (you'll need a program for viewing .dds files, like gimp). Once you've got it picked out, make a note of its name/s and rename the file/s you want to use the same thing. Copy and replace. More complex editing than that would take TES5edit and editing HOW the mods in question use grasses which I'm getting the impression you don't want to do, but if you do it can also be done. Above is an easy beginner option and will work fine.
Katy420
Seems like you just want ridiculously dense grass. Enhanced landscapes field grass optional is a good choice, or Verdant. What that guy's using to get that from that list is UBG, so if you wanted to do that you would want it as a base and replace some of it's files with those from Tamriel Reloaded Grasses, some of the "flashier" stuff from SFO (like the lupins), run it WITH Tamriel Reloaded trees because it hand places a lot, and with Spring Overhaul. My graphics card isn't good enough to run anything like that but there are a ton of them to choose from. SFO Summer edition is a little more performance friendly but still lush and denser than regular edition, that's what I use.

Katy420
For my setup (which AIN'T that nice), I use SFO summer, like I said, plus a little known mod "larger clumps of grass and more varied", which I swapped some models out for just like I suggested up there. I also use unique grasses and groundcovers but my system can't handle it with SFO summer so I deleted about half of the meshes (least favorites) so I don't load their graphics which brings the FPS hit down a lot. I mix in TR trees and I've replaced a few of SFO's tree textures and meshes with its files which gives me more aspen trees in place of certain pine models, gives the forest a little more diverse look. So it's very basic. But to do it still took a lot of time, because as you noticed, there are a literal buttload of files in these mods. I'm afraid you just have to go through them all one by one or you'll never know what you're replacing. The way grass mod work is by assigning certain models to spawn with certain terrain types. So you'd load that stuff in TES5edit and change what can spawn it and its density. But what you're talking about is easy, you have a model you don't like-- so find out which one it is and replace it. Like my motto. Keep it simple stoopid
