We might finally have a horse model, or the closest I can find. There's a ride-able buttercup horse mod, someone made a saddle for it in another mod. Now is there a way someone can kinda flesh out the buttercup to kind of smooth out the robotic looking parts of it? Or would that be insanely difficult?
