I posted most of the ones I knew in this thread but there are a few more since then.

Pearl Farm

Golden Perch Based on an inn from Tolkien's Middle Earth.

Random Tasks

Castle Sea View Farms

Escort Mission This one is based on Ultima Online quests. It's supposed to be really difficult.

Going Rogue

Skooma Deals If you'd rather manufacture than sell, there are mods for that, too, if you search on "skooma."

Better Beggars It pays...but you have to stay poor.

Gamblers of Cyrodiil

I'm looking for some mods that would let you be the owner of some sort of business or something like that. Or maybe one where you can be the leader of some new village or city. Something like that. I think it is kind of related to what OP is looking for too.

Pittcrew, I just linked to a bunch of job mods, and some of those do let you own the business. Golden Perch lets you become an innkeeper for example. There are more in that first thread I linked to, two posts there with jobs/businesses. For example, Shadowcrest is a winery you live in and own. The OP mentioned a few. Here's another one, but this one some people have complained makes TOO much money. Big Business

Dragonfire Trade and Transport makes you half owner of a business.

I may have missed a few because it took me a long time to locate and link all those. A lot of people ask for a mod that makes you royalty and lets you build a village from scratch that you run, which will evolve into a city. There is a work in progress called Vox Populi which aims to do something like that but it is just getting started. The link to the other thread I posted does include one mod that lets you build things. There are a couple of mods that make you a count or other such figure, but the database seems to be down right now. I wish I remembered the names and whether you also run a busines. My guess would be no. Merchants were middle class. The upper classes had big estates but largely lived off taxation. I will look later when the database is working for me, but no promises.
