cambragol
Just teach yourself through trial and error. Then occasionally refer to a tutorial if you get really stuck. Additionally, look at vanilla quests, scripts, packages etc. to see how something was done in game, then do that. The GECK website is probably all you need in terms of a reference/tutorial. This is how I learned to use the geck as well. I still learn new functions all the time. Just start small, I started with weapons/items and branched out from there. I recently made an outpost as an experiment in world space editing, it did not go too well but I learned a lot. And if all else fails just post a thread asking about a specific problem your having since more people will probably reply to that than such a large question like learning the whole geck. If you have any questions just post them in this thread and I will make a point of answering what I can. Good luck

DeadCorp
Learn G.E,C.KSpend some time with it.Search these forums and check out New Vegas Nexus as well. Download install everything in your Fallout NV folder if that's what you want to mod.Get FOMM and The script extender from fose.silverlock.orgDon't forget to change your .ini files Download a nice mode.I used cannabis by MadNuttah and the Red Rock Ranch mods to mess around with at first.Get to know your inventory.Learn what each category in the tree is capable of. Make new NPC/FactionsMake your changes easy to find by adding a tag to the front. numbers put it at the top of the list. 001myArmor or whatever You will find that it's not really that hard at all. I think the reason Good Springs is so populated with mods is that it an easy place to start and you can make a new player to start and walk around checking out the changes It is easy once you learn the hot keyslook for them in Edit/Render Windows hotkeys Then you just go around changing this to your liking. I have a huge pot field at Hunters Ranch. Talk about time consuming. Learn how to Script and Dialogue by looking at what the game has already. I've seen some youtubes about this. Well I get Dialogue still working on script. I have also seen in New Vegas Nexus that someone has put up help vids and tuts. Forget the name. since the PSN is down I have loads of time for modding.
