No. Sorry, but I don't think there's any way to easily do that. The only stuff I can see that has to do with changing ability name/text is specifically for concealment or for dealing with grenades renaming the throw ability for different grenade templates.

I was looking at XComGameState_Ability.GetMyFriendlyName() and XComGameState_Ability.GetMyHelpText(optional XComGameState_Unit Unit). It seems those methods have some special handling for overriding the displayed text for the Throw Grenade and Launch Grenade abilities with different grenade types. It didn't seem like it applied in this case.
