Mods and character build question

Ok, so this is my 5th or maybe 6th start for a new char. I've spent somewhere in the region of 70 hours trying out different builds, mods and exploring ideal paths.

The idea is to plot a best mod/character build for my playstyle... and after 70 hours you'd think i'd have some idea ;) buuuut I don't.

I kept creating classes with mage specialisations but having done some DB quests I realised how much I enjoyed the stealth aspect and wished the security/sneak/mm skills would hurry up and level. I also played with Oblivion XP which was nice getting xp for quests etc but I really missed the skill levelling aspect. Now I'm trying realistic levelling and have cut out a load of mods to try and increase fps etc.

Oblivion and DLCs

OOO with LE on and HF on... but OOO_Weeds off.

DarnUI

RAEVWD

Qarl's HiRes TP

Map Marker Overhaul

Colour Map

Elsweyr Anequina and Tales update

Bag of Holding

Togglable Quantity Prompt

LTD Vampire Overhaul

Refscope

Realistic Levelling

HGEC

Beautiful People

DK Imperials

Minimap

Bashed Patch

Elsweyr Colour Map

Ran Tes4Lodgen

I've removed Unique Landscapes and Better Cities... nice mods but my fps drops too much and some places are just way too cluttered.

Anyway. The question is: are there any better mods that replace the above? Aaaaaand... can someone give me a good build for a person who normally plays caster but enjoys the stealth aspect of the game. :)

Buildwise I've been considering:

Stealth Spec

Thief Sign

Armorer (no reason other than getting it up as quick as poss to reduce costs on repairing expensive items)

Alchemy (poisons and potions)

Blade (when things get up close and too personal)

Destruction (for aoe when kiting)

Light Armour

Marksman (for sneak attacks)

Security... although the other option is Alteration as security is a specialised skill and should level quicker anyway.

Stealth really is the way to go. It saves you from a good deal of unneeded healing spell/potions.

Plus its fun knowing you can stand in front of an NPC and they won't know you're there because the (vanilla) sneak system is so terrible.

Erenar's skill set is a good all around stealth set. Being a stealth character is pointless without the majority of those skills. In my opinion destruction isn't really that important as I've found illusion helps quite a bit more because of chameleon and invisibility.

Should I go Security or Alteration? Alteration covers more but security being major and specialised will make it rocket up the levels... and with realistic levelling that's not an issue i have to worry about :)

I'm also a little worried about the mod list I have.... each day i remove one or 2 mods because crashing every 30-60 mins is getting tedious. Although it wasn't much better with vanilla... i just can't work out how to keep the game stable. FPS drops are common when total bstask count goes up over 1000 or changing cells. I've turned shadows off completely. I don't know if this is mod related or just an 'oblivion thing'.

Wondering if, after all the mod swap outs, i should just clean install with the base mods i need and forget all others. ie keep the overhaul mods and drop elsweyr, raevwd and the texture pack.

(And yeah i know this is supporty but it started as wondering if there are more stable and up to date mods)
